This Lemon Risotto & Pinot Gris is What Dreams Are Made Of!

Ready to take your Pinot Gris tasting experience to the new heights? We’ve got a beautiful lemon risotto to keep your tastebuds happy!

The Ingredients You’ll Need

1 medium onion, diced

4 tablespoons butter

1 lemon, (zest + juice

1 cup arborio rice

2 cups chicken broth

2 cups water

34 cup grated parmesan cheese

2 tablespoons freshly chopped parsley

Extra parmesan cheese (for garnish)

Putting it Together

Start off by sautéing your onions in butter until they’re nice and soft. Begin to stir in your lemon zest and add your rice to the onion mixture. To ensure an even coating, stir the rice well and set the temperature back to a low-medium heat.

From there, add ½ cup of your broth, with 2 tbsp of lemon juice. Wait for the broth to begin simmering, then reduce the heat and wait for it to thicken. Add in an additional ½ cup of broth and stir until absorbed, repeating this process for the remainder of the broth. Begin the same process with the water, adding ½  cup at a time, stirring until the water has absorbed.

Wait until the rice has finished cooking. A good indicator is that the grains should be tender, with a slight firmness in the centre. Once the rice has finished cooking, remove from heat and stir in your parmesan and parsley (you may wish to use a different herb, such as thyme or chives).

Dish Up!

Now all that’s left to do is plate up, add your salt & pepper, and top with the remaining lemon juice & grated parmesan as a garnish. Personally, we think it’s one of the best risotto’s going around! Have a go at the recipe yourself and let us know what you think!
